Blueberry Oatmeal Muffins or Donuts

Indulge in a guilt-free treat with these fluffy blueberry muffins. Made with wholesome ingredients like whole grains and fresh blueberries, they're a delicious and nutritious way to start your day. Packed with antioxidants and fiber, these muffins will keep you feeling full and satisfied. Enjoy them as a breakfast or a healthy snack.

Prep Time: 10 minutes

Cook Time: 12-15 minutes

Makes: dozen




INGREDIENTS

  • 1/4 cup milk of choice

  • 1/3 cup maple syrup or sweetener of choice

  • 3-4 tablespoon applesauce or oil of choice

  • 1 teaspoon apple cider vinegar

  • 1/4 teaspoon vanilla extract

  • 1/4 teaspoon almond extract

  • 1 cup oatmeal, ground

  • 1/4 teaspoon mineral salt

  • 1 teaspoon baking powder

  • 1/2 cup blueberries, fresh or frozen


DIRECTIONS

  1. Preheat oven to 350° and grease pan

  2. Whisk together all dry ingredients until evenly combined

  3. Stir in all wet ingredients, except for Blueberries

  4. Add batter to muffin/donut pans then add in a few blueberries to each one!

  5. Bake for 12-15 minutes or until edges start to brown

  6. Leave them to sit in the pan to cool for a few minutes before removing to prevent them from breaking.... then get impatient, pop a few out and demolish while the others continue to cool.
