INGREDIENTS
1 cup Strawberries, chopped*
1/4 cup Amaranth
1 tablespoon Ghee, butter, or oil of choice
1-2 tablespoons Lemon Juice
1/2 cup Water
Pinch of Mineral Salt
1/8 teaspoon Vanilla Extract**
1/8 teaspoon Almond Extract**
* You can replace the strawberries with any fruit of your choice. My favorites include apples, peaches, blueberries, and bananas.
** The extracts are just for extra flavor, and are not necessary
DIRECTIONS
Melt ghee or oil of choice over medium heat on stove
Add amaranth and stir until it turns golden and toasty
Add all the remaining ingredients then (A) continue to stir on medium heat until amaranth is translucent or (B) turn the heat down to low and cover the amaranth for 4-6 minutes.
Top with mint, coconut shavings, or topping of choice. Enjoy!
