Berry Amaranth Porridge

This gluten-free breakfast is loaded with nutrients and energetics that help you build

and repair muscle, keep you feeling fuller for longer, reduce stagnancy or heaviness,

and support your overall health and well-being. The best part is that the ingredients are considered light and easy-to-digest, acting as the perfect jumpstart to your day.

Cook Time: 15-20 minutes

Makes: 2 servings




 

INGREDIENTS

  • 1 cup Strawberries, chopped*

  • 1/4 cup Amaranth

  • 1 tablespoon Ghee, butter, or oil of choice

  • 1-2 tablespoons Lemon Juice

  • 1/2 cup Water

  • Pinch of Mineral Salt

  • 1/8 teaspoon Vanilla Extract**

  • 1/8 teaspoon Almond Extract**


* You can replace the strawberries with any fruit of your choice. My favorites include apples, peaches, blueberries, and bananas.

** The extracts are just for extra flavor, and are not necessary


 

DIRECTIONS

  1. Melt ghee or oil of choice over medium heat on stove

  2. Add amaranth and stir until it turns golden and toasty

  3. Add all the remaining ingredients then (A) continue to stir on medium heat until amaranth is translucent or (B) turn the heat down to low and cover the amaranth for 4-6 minutes.

  4. Top with mint, coconut shavings, or topping of choice. Enjoy!
